Chestnut, Apple and Pine Kernel Stuffing
Serves 4-6

Ingredients
1 small onion, chopped
grated zest of 1 lemon
1oz (25g) butter
4oz (110g) white breadcrumbs
1tbsp (15g) chopped parsley
2 English dessert apples, peeled, cored and chopped
2oz (50g) pine kernels
4oz (100g) chopped tinned chestnuts
2 medium eggs, beaten
salt and freshly ground pepper

Method
Pre-heat oven to 180C/350F/Gas 4/160C for fan oven.

Gently sweat the onion and lemon zest in the butter for 10 minutes.

Add the onion mixture to the other ingredients, binding with the eggs.

Roll into balls and place on a greased baking sheet. Cook for 20 minutes or until brown. Serve around the turkey.
