 Bread Sauce |

Serves 4-6
Ingredients
300ml/10floz milk
1 onion, peeled and studded with 5 cloves
1 bayleaf
5 peppercorns
55g/2oz butter
80g/3oz fresh white breadcrumbs
150ml/5floz single cream
Salt and pepper
Method Put the milk in a saucepan with the onion, bayleaf and pepper corns and bring to the boil. Turn off the heat and infuse for 30 minutes. Take out the bayleaf and peppercorns and stir in the breadcrumbs and the butter.
Cook on a gentle heat until smooth and thick. Stir in the cream and season with salt and pepper.
Serve at once or make in advance and gently reheat when needed. Cover the surface with a piece of clingwrap to stop a skin forming and if it becomes too thick, add some more milk to thin it. |
