Gentlemen's Roast Potatoes
Serves 6-8

Ingredients
7-8 medium-sized Maris Piper or King Edward potatoes
3-4 sprigs of fresh thyme
1 lemon
olive oil
salt and pepper

Method
Cut the potatoes lengthwise into 4-6 chunky chip shapes. Toss the chips in enough olive oil to coat them and season with salt and pepper, and then put them into an ovenproof dish. Give the thyme a gentle crush in your hand and toss it into the dish over and between your chips. Cut the lemon in half and put it into the pan as well.

Cook the chips in a pre-heated oven (180C/350F/Gas 4) for at least an hour.

After an hour, check that your potatoes are cooked by breaking one in half. The inside should be floury and steamy. Remember: a) there is nothing more unpalatable than raw potato, and b) the best thing about cooking is that you get to do lots of taste tests - think of them as mini-appetisers - in the process.

When the potatoes are cooked, remove them from the oven. Using a fork and being careful not to burn yourself, press the lemons against the side of the pan, squeezing out some of the juice to coat the potatoes before serving them.
