Spicy Plum Sauce
Prep and cook time: 30 mins to 1 hour
Serves: 6

Ingredients
8 ripe plums, stoned and cut in quarters
5cm piece fresh root ginger, finely chopped
1 red birds eye chilli, deseeded and finely chopped
284ml tub fresh vegetable stock
150ml dry white wine
150ml tomato juice
2-3 sage leaves
½ x 5ml spoon wholegrain mustard
salt and freshly ground black pepper

Method
Place the plums, ginger, chilli, vegetable stock, wine, tomato juice, sage and mustard in a pan and cook over a low heat for 45 minutes.

Pass the mixture through a sieve and into a clean pan, season to taste and reheat thoroughly before serving with meat or poultry.
