Warm Baked Brie with Plum Compote
Serves: 10-12
Ingredients
1kg Brie
Freshly ground black pepper
1kg plums, halved and stoned
25g butter
125g brown sugar
5ml spoon ground cinnamon
juice and rind of 1 orange

Method For the plum compote, place together all the ingredients in a saucepan.

Cover with a lid and simmer for 5 minutes. Remove the lid and continue simmering for a further 8-10 minutes or until the plums are just soft.

Allow to cool slightly.

For the Brie, preheat the oven to 200°C, 400°F, Gas Mark 6.

Place the brie in a shallow ovenproof serving dish. Season well with black pepper and spoon on the compote or jam.

Bake for 8-12 minutes or until the Brie is warm and very soft.

Serve at once with warm oatcakes or crusty bread.
