Plum and Goats' Cheese Tart

Serves: 6
Ingredients
375g pack fresh ready-rolled puff pastry
100g round of goats' cheese, sliced into 6 rounds
6 plums, halved, stoned and cut into 12 slices
1 small egg yolk
½ x 5ml spoon caster sugar
15ml spoon milk
3 x 15ml spoons honey

Method
Preheat the oven to 220°C, 425°F, gas mark 7.
Cut out 6 fluted rounds of puff pastry with a 7cm cutter and place on to a lightly greased baking tray.

Place a piece of goats' cheese on the pastry and flatten slightly. Arrange the plum slices on top in a spiral fan leaving a 1cm border.

Beat together the egg yolk, sugar and milk. Brush the glaze over the pastry edges, drizzle the honey over the plums. Bake in the preheated oven for 15 minutes or until puffed up and golden brown and the plums are tender. Serve warm with fromage frais.
