Plum & Tomato Soup
Serves 6
Ingredients 25g olive oil
1 medium onion, finely chopped
450g red plums, stoned
450g tomatoes, peeled, cored and deseeded
75ml tomato juice
570ml chicken stock
1 sprig of thyme
1 teaspoon of caster sugar
2 red plums, peeled, stoned and diced
1 teaspoon of chives, snipped
1 tablespoon of parsley, finely chopped
Salt and pepper

Instructions
Heat the oil and gently sauté the onion till soft but not browned. Stir in the plums, tomatoes, tomato juice, stock, thyme, sugar, a generous pinch of salt and a few grinds of pepper.

Bring to the boil, turn down the heat, and simmer gently for 15 minutes. Leave to cool slightly, fish out the thyme, and force through a sieve. Check the seasoning, and chill.

Serve garnished with chopped raw plums, chives and parsley.
