Spicy Tofu with Satay Sauce and Soba Noodles

Serves: 4

Ingredients
40g caster sugar
1 red chilli, deseeded and finely chopped
200ml water
75g red plums, cut into 5mm dice
15ml spoon sesame oil
150g pack marinated tofu pieces
300g pack satay sauce
300g pack soba noodles
2 x 15ml spoons fish or soy sauce
To garnish: snipped chives and julienne of spring onions

Method
In a medium size pan, heat the caster sugar, chilli and water until the sugar has dissolved.

Add the plums to the pan and cook over a medium heat until you have a thick syrupy mixture, approximately 7 minutes. Remove from the heat.

In a separate pan, heat the sesame oil over a moderate heat and seal the tofu, approximately 2-3 minutes.

Add the plum mixture and cook for a further minute.

Add the satay sauce and bring to the boil. Remove from the heat.

Cook the soba noodles according to pack instructions, add to the satay and season with fish sauce.

Garnish with the snipped chives and spring onions and serve immediately.
