Prep and cook time: Up to 30 mins Serves: 4 Ingredients 500g parsnips, peeled and diced 15g butter salt and freshly ground black pepper 3 plums, peeled and diced 1 pear, peeled and diced 1 apple, peeled and diced 50g caster sugar 3 x 15ml spoons water 25g white mustard seeds, crushed 125g pack Peppered ham Method Put the parsnips into a pan and cover with water. Bring to the boil and cook until soft. Drain off the water, puree the parsnips with the butter and seasoning. Keep warm. Meanwhile, put all the fruits into a saucepan with the sugar, water and mustard seeds. Heat until the fruit softens and the sugar solution reduces by half. Serve the ham on top of the parsnip puree with the mustard fruits as a glaze. |
