Apple Ice Cream
Serves 4

Ingredients
6 Royal Gala apples
100ml water
200g natural low-fat yogurt
100ml evaporated milk
pinch ground cinnamon, to taste

Method
Peel the apples, reserving the peel, and roughly chop. Put the chopped apple and the peel in a saucepan with the water.

Cover and simmer for 5 minutes, stirring frequently.

Remove the peel and set aside along with a quarter of the poached apples. Mash the remaining apples with the water.

Stir in the yogurt, milk, reserved poached apple peel and cinnamon, if using. Put in a plastic container, large enough for the ice-cream to be in a thin layer.

Place in a freezer and mash well every hour for 3 hours (A creamier result is obtained by processing the ice-cream instead of mashing). Freeze until firm. Delicious served with slices of fresh apple and oatcakes.
