American Apple Cake
Serves 4-6

Ingredients
125g butter
350g caster sugar
2 medium eggs, beaten
250g plain flour
5ml spoon bicarbonate of soda
15ml spoon ground cinnamon
1½ x 5ml spoons ground nutmeg
5ml spoon salt
750g apples, peeled and finely chopped
125g chopped mixed nuts

Method
Cream together the butter and sugar, then gradually beat in the eggs. Sift the flour, soda, spices and salt together and fold into the creamed mixture, then fold in the apples and nuts.

Turn into a greased tin, about 23 x 33 cm. Bake in a preheated moderate oven, 180oC, 350oF, Gas Mark 4 for 1¼ hours, then lower the temperature to 150oC, 300oF, Gas Mark 2, and cook for 45 minutes. Cool in the tin.

To freeze, remove the tin, wrap in foil and place in a polythene bag. Seal, label and freeze.

To serve, thaw, wrapped at room temperature for 2 hours. Cut into squares.
