Chicken and Apple Fajitas
Serves 4

Ingredients
450g Bramley apples, peeled, cored and thickly sliced
juice of 1 lime
2 x 15ml spoons olive oil
2 medium onions, thickly sliced
2 cloves garlic, finely chopped
1-2 red chillies, deseeded and finely chopped
5ml spoon ground coriander
5ml spoon ground cumin
450g chicken fillet, cut into 1cm thick strips, 5cm long
salt and freshly ground black pepper
2 x 15ml spoons freshly chopped coriander
8 wheat tortillas

Method
Cut each apple slice in half lengthways, put into a bowl with the lime juice and toss together.

Heat the oil in a large frying pan, add the onion and cook over a high heat for 2 minutes, add the garlic, chillies, the spices and the chicken then fry, stirring for about 5 minutes until the chicken is golden. Lift the chicken out of the pan and set aside.

Add the apple with the lime juice and 5 tablespoons of water to the pan and cook with the onions for 3 minutes. Return the chicken to the pan and continue to cook for 5 minutes until the apples are tender but still hold their shape. Meanwhile heat the tortillas as directed on the pack, the quickest way is to transfer them to a plate, cover with film and microwave on high for 20-30 seconds.

Season the filling with salt and pepper, then add the fresh coriander.

To serve, place 2 heaped tablespoons of the filling in each tortilla, roll up and eat immediately.
